Gulab jamun Recipe

1 cup pani le us me 1 cup sugar add kare 4 kuti hui ilaichi dale aur low flame pr pakaye zyada garhaa ni krna bas chipchipa krna hai.sugar syrup Ready hai

Ak bowl le us me 1 & half cup milk powder dale
1 Tspn baking powder add kare
2 Tblspn ghee add kare aur achhe se mix kare
Ab aadha cup dudh le aur soft sa dough gundh le
Last me thora sa pani add kare dough k liye
Ab ise 10 min rest k liye rakh de. Ap fridge me b rakh sakte hai. 
Then 10 min bad us k chote chote pere banaye aur dhyaan rakhe k koi crack na aye achhe se gol se pere bana kr low flame pr fry kare dhyaan rahe oil zyada na garm ho na hi thanda low flame pr hi garm kr k fry krnaa hai yaha tak k golden brown colour ajaye
Phir use nikal k foran garam sugar syrup me dal de agr sugar syrup thanda ho gya ho to use phir se garm kr le gulab jamun aur sugar syrup dono garam hone chaiye phir use 2 ghante k liye chor de.

Ak pan le us me 1 & half cup vegetable oil add kare. 
then, 2 tblspn Adrak lehsun ka paste add kare. 
1 cup green chilli add kare.
sabit garam masala add kare. 7
hara dhaniya add kare.1 cup 
pudine ki pattiya add kare,cup1
ab sabit masoor add kare jo 1 ghante k liye soak kiya ho.200 gram
thori der bhoone 
phir haldi powder add kare 1 tspn 
ab mutton add kar de 1 kg
aur bhoone 15 min k liye
then as required to your rice water add kare ab 10 min k liye medium flame par pakne de 
rice add kar de aur pani sukh jane tak chamach se hilate rahe har 2 min bad 
jab rice half done ho jaye to dhakan rakh de aur upar koi weight rakh de 15 min bad khol de

How to make Balu shahi in hindi/urdu

 1 pan le us me
2 cup chini
1 cup pani
2 ilaichi
Ye sab daal kr low flame pr pakaye aur jab syrup thik hone lage to Few drops lemon juice add kr de.

1 bowl me 2 cup Maida le
1 Tspn soda
1 Tspn salt
3 Tblspn Ghee
Ye sab add kr k achhi trah mix kare hatho se then
1 & half Tspn ilaichi powder
Half cup curd/ Dahi add kr de
Aur As Required water Goondh le.
15 min restk liye rakh de.
Phir use Roll kare aur cut kare chote pieces me
Then pere bana le aur low flame pr fry kare.
Jab ak side brown ho jaye to side chang kare bar bar chamch na chalaye.
Aur ak sath bhot zyada add na kare pan me frying k liye thore thore kare.
Fry krne k foran bad sugar syrup me 10 min k liye daal de.
5 min for each side.
Then Almond pista se garnish kare.

How to make Seekh kabab

Seekh kabab
500 gms Lamb Mince(Keema)
Brown Color
3/4 tsp Garam Masala
1 tsp Garlic (Lasun) paste
1 tblsp Raw Papaya Paste
1 tsp Ginger (Adrak) Paste
2 tblsp Cashewnut (Kaju)
2 tsp thick Cream (Malai)
2 Onion (Pyaj)
2 tsp Carom Seeds / Thyme (Ajwain)
2 tsp Dried Mango Powder (Amchoor)
2 tblsp Rock Salt (Kala Namak)
3 tblsp Cumin Seed (Jeera)
1 tblsp Dry Ginger (Saunth)
1 tsp Black Pepper (Kali Mirch)
1/2 tsp Nutmeg Powder(Jaiphal)

How to make Seekh Kabab

METHOD:

1) Wash the keema and put in a strainer and gently press to squeezeout all the water.

2) Mix all the ingredients to the keema and knead well.

3) Keep aside for 1 hour.

4) Heat a gas oven or an electric oven with the skewers.

5) Take a big ball of the keema mixture and hold a hot skewer carefully in the other hand.

6) Press the mince on to a hot skewer.

7) The keema will immediately stick to the hot skewer.

8) Repeat with left over mince on all the other skewers.

9) Place the skewers in the oven.

10) Keep rotating the skewers occasionally.

11) When cooked, gently remove the kababs from the skewers with the help of a napkin.

12) Shallow fry the kababs on a nonstick pans in 1 tablespoon oil.

13) To serve sprinkle some chat masala and lemon juice on the kababs.

Ingredients:
1 kg Beef mince
1 cup Oil
3-4 Tomatoes (sliced)
1 cup Onion (chopped)
Salt to taste
1 tsp Turmeric
1 tsp Cumin powder
1 tsp Coriander powder
2 tsp Red chili powder
1 & 1/2 tbsp Chili flakes
1 tsp Garam masala powder
1 cup Water
1 cup Yogurt
1 tbsp Ginger garlic paste
Coriander for garnish
Coal for smoke
Directions:
In a clay pot heat oil, add ginger garlic paste and sauté for a minute.
Then add mince and mix it for 3 to 4 minutes, then add salt, turmeric, red chili powder, chili flakes, water, cover it and cook until oil separates.
Then add garam masala powder, coriander powder, cumin powder and mix it well.
Add yogurt and cook until water dries out.
Then add tomatoes, chilies and cover the lid for 30 seconds.
In end put a foil cup in pot, place hot coal, drizzle oil on top and smoke your dish.
Your BBQ keema is ready to serve.

Ingredients:
1kg Mutton (leg/bong)
1 cup Yogurt
1 tsp Red chili powder
1 tbsp Green chilies paste
1 tbsp Ginger garlic paste
Salt to taste
1/2 tsp Food color (yellow)
1 tsp Cumin powder
1 tsp Mace Powder
1/2 tsp Nutmeg
1 tsp Black cardamom powder
3 tbsp Prune water
1 tsp Mustard paste
1 tbsp Caper powder
1 cup vinegar
Direction:
In a bowl dip mutton in vinegar for two hours.
Then fry mutton and let it cool.
In a bowl add yogurt, salt, red chili powder, green chilies paste, ginger garlic paste, food color, cumin powder, mace, nutmeg, cardamom powder, prune water, mustard paste, caper powder and mix well.
Add mutton in it and marinate for 4 to 6 hours.
Wrap mutton pieces in aluminum foil separately.
Steam for one hour in a steamer.
Your mutton foil roast is ready to serve.
